Alcohol and other safety concerns

The CFFI does not endorse or promote the consumption of fermented beverages that contain alcohol (except kombucha containing less than 0.5% ABV). Scientific evidence shows that alcohol is associated with numerous health risks; therefore, the CFFI’s promotion of fermented foods for their health benefits excludes these alcoholic beverages.

Fermented foods may not be suitable for everyone, including individuals with conditions such as histamine intolerance, immune disorders, high blood pressure, or gastrointestinal issues. Fermented products can contain elevated levels of biogenic amines (e.g., histamine, tyramine) and other fermentation‑derived compounds; in sensitive individuals these may trigger adverse reactions or exacerbate pre‑existing conditions.1-2

Consumers should exercise their own judgment, and consult a qualified healthcare professional before making any significant dietary changes.
